WHAT YOU VISIT
Rockland Estate Eco-Park
Built in the 1700s, the plantation house is the former home of slave Trace Wilson and his descendant Emilio Wilson who purchased the property to educate current and future generations about the conditions of plantation life as well as the customs, traditions and history of St. Maarten. Today, it's the site of thrilling rides like the Sky Explorer, a four passenger chairlift that transports riders to an upper deck that encircles the mountaintop, Sentry Hill. From the 1,125 feet vantage point, you're treated to 360-degree views of the whole island, lovely tropical scenery and ocean views. Once back down, you'll be treated to lunch in Emilio's wine cellar, which once served as the sugarcane boiling house.

Once at the top of Sentry Hill, step out onto the platforms and behold spectacular 360-degree views of St. Maarten including the neighboring islands of Saba, St. Eustatius and St. Barts and Anguilla.

LUNCH
Chef Sydney at Emilio's wine cellar will take you through a culinary journey with a four course tasting menu that includes one glass of wine; butterfly lemon garlic shrimp with spicy avocado, spinach, ginger oil, and mango salsa; roasted octopus with coriander, organic greens, cherry tomatoes, mango, mint dressing, and lime gelato; tenderloin of beef with creamy white chocolate mashed potato, zucchini, roast carrots, brandy jus; and for dessert, passion fruit mousse.
